Ingredients:
1 package of Impossible Meat
1/2 of large sweet onion, diced
1 Green Bell Pepper, diced
1/4 cup of chopped jalapeno (I used the pickled jalapenos in the jar)
Nandos Perri Perri Sauce-Medium
So Delicious Cheddar Jack Shreds
Salt and pepper
Flour Tortillas
Vegetable Oil
Directions:
In a large frying pan heat a little oil over medium high heat
Add in your onion and saute until translucent
Add in your green bell pepper and saute to for 2- 3 minutes
Crumble in your Impossible meat
Cook until browned
Season with salt and pepper
Stir in your jalapenos
Turn off heat and set aside until ready to make quesadillas
Prepare quesadillas:
Heat a non stick pan over medium
Place down your tortilla
Sprinkle half of the tortilla with a little cheese
Sprinkle in some of your Impossible meat mixture
Drizzle with Perri Sauce
Top with a little more cheese
Fold over tortilla and cook on each side until tortilla turns golden and cheese is melted
Repeat with remaining ingredients
Serve and enjoy!
