'Salmon' Salad Stuffed Avocados


Growing up my grandparents would make the best salmon salad using Pink Salmon from a can. It was a staple at the house for family gatherings. With Good Catch Fish Free Tuna we are able to replicate a cruelty free version that brings my taste buds back to some of the best childhood memories.

Ingredients:

2 packages of Good Catch Fish Free Tuna

Beet Juice from 1 small can of beets

2-3 celery stalks, chopped

½ small red onion, diced

1/3 cup of relish

1/3 cup of Follow Your Heart Vegenaise

1 tbl of yellow mustard

Splash of red wine vinegar

Salt and pepper

3-4 ripe avocados cut in half, seeds removed

Directions:

In a medium bowl add your beet juice

Add in your good catch tuna

Mix well

Allow to marinate for a few hours

Using hands squeeze out as much juice from the tuna

Place the tuna in a large mixing bowl

Add in your vegenaise, mustard, relish, celery, onion, and red wine vinegar

Season with salt and pepper

Mix well

Refrigerate for 15 minutes or until ready to plate

Scoop out a little of your avocado, reserve for later use

Scoop a generous amount of salmon salad Into your avocados

Repeat with remaining avocados

Serve and enjoy!
