Ingredients:
1 package of Tofurky Peppered Deli Slices
Juice from 1 14.5oz can of beets
1 tbl of Red Wine Vinegar
Salt and Pepper
10-12 small potatoes
Follow Your Heart Provolone Cheese Slices
Follow Your Heart Thousand Island
Roughly 1-2 cups of sauerkraut
Butter
Vegetable Oil
Directions:
In a medium bowl mix together your beet juice, vinegar and a pinch of salt and pepper
Mix well
Add your deli slices, pulling each one apart as you add it to the bowl
Press into the juice making sure all the slices are coated
Cover and marinate over night in the fridge
Ready when the slices are pink/purple color
Remove from liquid
Preheat oven to 425
Wash and dry potatoes
Pierce your potatoes with a fork a couple times
Rub with oil and salt
Place onto baking sheet and bake for roughly 30-35 minutes
Time depends on the size of your potato
Remove once cooked through
Let cool
Cut in half and remove most of the potato meat leaving its shell (Can use potato mix to make other recipes)
Brush top of potatoes with a little melted butter
Place back into oven and broil for 2 minutes
Remove
Place ½ or 1/3 slice of cheese ontop of potatoes
Place under broiler for another 2-3 minutes until cheese starts to melt
Remove from oven
Top each potato with a little of your deli slices
Place under broiler for 2-3 minutes
Remove and top each potato with a little sauerkraut
(if you want you can place back under broiler for 2 minutes)
Drizzle with Thousand Island
Serve and enjoy!
