GF Savory French Toast

Taking French toast to a whole other level....and did I mention it's also Gluten Free.

Ingredients:

2 Onions, sliced thin

12oz of Cherry Tomatoes

2 tbls of crushed garlic

2 Follow Your Heart Vegan Eggs, prepared according to directions

1/3 cup of Non Dairy Milk

2 tbl of melted butter

Garlic Salt

.66 oz of fresh basil leaves, chopped

Vegetable Oil or olive oil

Vegan Butter for pan frying

2 tbls of Balsamic Vinegar

Directions:

Preheat oven to 400

Toss your tomatoes in a little oil

Bake in preheated oven for roughly 15 minutes, shaking pan every so often

Remove when starting to burst

Set aside

Turn oven down to 200

In a large non-stick frying pan add a little oil

Heat over medium high

Add in your onions

Mix well

Turn heat down to medium (maybe even low medium depending on your burner)

Continue to cook your onions, turning often, until golden and caramelized.

Adding more oil if necessary

Once onions have caramelized add in your garlic and a little more oil

Cook for 1-2 minutes

Add in your tomatoes

Cook for 2 more minutes

Add in your chopped basil

Mix well

Add in your balsamic and cook for 1 minute

Remove from pan, set aside, wipe pan clean

In a medium large bowl prepare you vegan eggs

Add in your milk ,melted butter, nutritional yeast, and a pinch or two of garlic salt

Mix well

Add a little butter to your pan, heat over medium high

Taking one slice of bread and press it into the egg mixture, turn over to full coat both sides

Slide it across the bowl to remove excess

Place into heat pan

Fry on each side for 2-3 minutes

Repeat with remaining bread slices, adding more butter each time

(place cooked pieces on a sheet tray covered with foil in the 200 degree oven until ready to serve)

Plate:

Place a one or two slices on your plate

Top with the tomato and onion mixture

Drizzle with balsamic glaze

Serve and enjoy!
