Perfect weeknight meal. Loaded with tons of flavors, textures and colors!
Ingredients:
1 package of Gardein Chick’n Scallopini
1 red bell pepper, chopped
5 garlic cloves, sliced
2 king oyster mushrooms, chopped
2-3 heirloom tomatoes, chopped (depending on size of tomatoes, you want at least 1 cup of chopped tomatoes)
½ teaspoon Dried Parsley
½ tbls Earth Balance Butter
Salt and pepper
Olive Oil
Fresh Parsley for garnish
Directions:
In a large frying pan add a little olive oil
Heat over medium high
Add in your garlic and cook for 1 minute
Add in your pepper and cook for 2-3 minutes
Then add in your mushrooms
Cook for an additional 3-5 minutes
Add in your tomato and parsley
Season with a generous amount of salt and pepper
Remove from pan and set aside
Using same pan add more olive oil
Cook your chick’n for 2-4 minutes on each side
Halfway through add in your butter
Allow cutlets to brown up a bit and soak in the butter
Remove and plate, top with veggie mix
Sprinkle with freshly chopped parsley
