Mac N' Cheese served inside a deliciously roasted butternut squash!
Ingredients:
MsVegan Mac N' Cheese, Recipe below
4 Butternut Squash
Roughly 1 cup Panko Bread Crumbs
Earth Balance Butter
Directions:
Preheat oven to 400
Cut your butter nut squash in half crosswise
Reserve the top for other recipes
Remove the seeds and strings from the bottom half
Place onto a baking sheet, if it doesn't sit up right cut off a little of the bottom to make it flat
Drizzle with a little melted butter and season with salt and pepper
Bake in preheated oven for roughly 30-35 minutes until tender and starting to brown
Remove and stuff the inside generously with your prepared mac and cheese
Top with panko crumbs
Drizzle with more melted butter
Place under broiler for 3 minutes or so until starting to brown
Serve and enjoy!

Macaroni and Cheese Ingredients:
16oz of elbow noodles
1/3 cup of earth balance butter
1/3 cup flour
2-3 cups nondairy milk, start with add more later if needed
1 7.1 oz Daiya cheddar block, cut into tiny pieces
1 8 oz bag of Follow Your Heart Cheddar Shreds
1/2 teaspoon Onion powder
1/2 teaspoon Garlic powder
1 tbl of Dijon mustard
1/3 cup nutritional yeast
Salt and pepper
Directions:
Cook noodles according to package, drain
Melt your butter in large pot over medium-high
When melted whisk in your flour
Slowly whisk in 2 cups of milk
When fully mixed add in your cheeses
Stir to melt
Add in your nutritional yeast, onion powder, garlic powder, and dijon mustard
Adding in more milk if too thick
Continue to stir until fully melted
Season with salt and pepper
Add your cooked noodles
Stir to evenly mix cheese with noodles
