This Salad, is not your typical Salad. The flavors and textures will leave you wanting more and more.
Ingredients:
Gardein Chick’n Strips, thawed and chopped
Can of Garbanzo Beans
2-3 tbls of Earth Balance butter
Pinch or two of garlic salt
1 tbl of Braggs Liquid Aminos
2 tbl of crushed garlic
1 large red bell pepper, diced
1/3 cup of parsley, chopped
Romaine lettuce, chopped
2-3 cups cooked rice
Salt and pepper
Tahini dressing, recipe below
Directions:
In a large frying pan melt 1 tbl of butter over medium high heat
Add in your garbanzo beans
Cook, turning often, for roughly 15-20 minutes until crispy
Season with garlic salt
Remove from pan
Using same pan de-glaze with your liquid aminos
Add in more butter (roughly 2 tbl) and your garlic, mix well
Cook for 1 minute
Add in your chopped chicken strips
Cook for 2 minutes
Add in your bell pepper
Cook for 3-5 minutes
Add in your parsley, salt and pepper
Mix well
Let cook for 2-3 more minutes
Turn off heat
I like to throw the garbanzo beans under the broiler for about 3-5 minutes or so before serving to get extra crispy
Plate:
Place down a handful of your chopped romaine
Top with rice
Top with your chicken mix
Drizzle with tahini sauce
Top with crispy chickpeas
Serve and enjoy
Tahini dressing:
1/3 cup tahini
1/4 cup Follow Your Heart Sour Cream
Juice from 1 lemon
1-2 tbl of olive oil
Splash of water
Splash of red wine vinegar
1 garlic clove
Combine ingredients into blender and mix until blended smoothly.
Refrigerate until ready to use.
