Not too much to this recipe besides delicious ingredients piled to perfection.
Ingredients:
Tostada Shells
Cena Vegan Pollo Asada
Picked Onions, Recipe below
Bunch of cilantro roughly chopped
2 tomatoes, diced
2 avocados, diced
Juice from 1 lemon
Salt
Can of your favorite vegan re-fried beans, or you can make you own
Directions:
In a medium bowl carefully combine your tomatoes, pinch or two of your chopped cilantro, avocado, lemon and a pinch of salt
Mix well
Cook cena meat according to package
Heat your beans
Spread the beans generously on your tostada
Top with a generous portion of your Pollo Asada
Top with tomato mix, pickled onions, sour cream and extra cilantro for garnish
Serve and enjoy!
Pickled Onions
1/2 cup of apple cider vinegar
1 tbl of sugar
Pinch of salt
1/2 cup water
1 red onion thinly sliced
Directions:
Whisk together the first three ingredients, add in water
Place your sliced onion into a mason jar or a jar with a lid
Pour liquid over the onion
Let sit at room temperature for at least 1 hour
It can be used after about an hour but I prefer tat least a day
