What is not to love about stuffed potatoes! Not only are they delicious, you can get creative and stuff them with countless amounts of ingredients. This one does not let you down. It is so hearty it can be your main dish!
Ingredients:
3-4 medium sized potatoes
2 tbl of crushed garlic
8 oz of mushrooms, sliced
2 cups of spinach
1/4 cup of Follow Your Heart Parmesan, plus 1 tbl for serving
1/4 cup of Ms Vegan Parmesan, recipe below
2-3 tbl of butter
Salt and Pepper
Lightlife Organic Tempeh
1/3 cup of Vegenaise
1-2 tbl of balsamic vinegar
Olive oil
Vegetable Oil
Directions:
Preheat oven to 425
Wash and dry potatoes
Poke each potato a few times with a fork
Place onto baking sheet and bake for 20-30 minutes until tender
In a small sauce pan add water and bring to boil
Add in your tempeh and cook for 1-2 minutes
Remove tempeh from water and slice into small pieces/chunks
Heat a little oil in large frying pan
Add in your tempeh and fry on each side for 2-3 minutes
Remove tempeh
Whisk together you vegenaise and balsamic vinegar
Mix vegenaise sauce with your tempeh
Place onto baking tray and bake in oven for 20 minutes, turning 1 or 2 times
Remove when crispy
Chop into crumbles
While potatoes and tempeh are cooking prepare your mix
In a large frying pan add a little oil
Add in your garlic and cook for 1-2 minutes
Add in your mushrooms and cook for 3 minutes
Add in spinach and cook until slightly wilted
Stir in both your parmesans, turn off heat
Remove your potatoes and cut each in half
Carefully remove the meat from the poatoes
Stir potato meat into mushroom and spinach mix
Mix well
Stuff mixture back into you potato skins, sprinkle with reserved parmesan
Sprinkle your lightlife crumbles ontop
Plate, serve and enjoy!
