Polenta Stacks


Polenta is such a fun and versatile dish. I like to always keep a prepared Polenta from Ancient Harvest in my pantry for a quick meal to whip up. This one is quick and easy but delectable.

Ingredients:

1 18oz Ancient Harvest Polenta Roll

12oz of mushrooms sliced

16oz of baby spinach

1 minced garlic clove

Salt and Pepper

Olive Oil

Follow Your Heart Parmesan Shreds

Vegetable oil or Vegan Butter

Directions:

In a medium sauce pan add a little oil, heat over medium-high

Add in your garlic and cook 1 minute

Add in your sliced mushrooms

Saute for 5 minutes until cooked

Season with salt and pepper

Remove the mushrooms but leave the juice

Keep heat on medium high

Add in your spinach and cook until lightly wilted (Add more oil or water if liquid is gone)

Season with salt and pepper

Remove and set aside

Slice your polenta into 3/4 inch slices

Add a little oil or Vegan butter to a frying pan, heat over medium-high

Add your polenta slices and fry on each side for 3-5 minutes

Remove and plate

To Plate:

Place onto polenta slice down onto your plate

Top with your cooked spinach

Add your mushrooms to form a tower

Top with Follow Your Heart Parmesan

Serve and Enjoy!
