Kale and Yam Grilled Cheese


This is such a hearty and healthy grilled cheese and it is super quick and easy to whip up!

Ingredients:

1 bunch of kale, stems removed and chopped

1-2 large yams/sweet potatoes, cooked

Follow Your Heart Provolone Cheese Slices

Balsamic Glaze, store bought or recipe below

1 tbl of butter

Sliced Sour Dough Bread

Directions:

In a medium frying pan add a little water and heat over medium-high heat

Add in your chopped Kale and saute in water for 2-3 minutes

Season with garlic salt and set aside

Remove the meat from your potatoes and mash well

Prepare sandwiches

Heat a little butter in a non-stick pan over medium heat

On one piece of bread add your cheese

Spread with your mashed yams

Place into heated pan

Top with your kale

Place another bread into skillet and top with more cheese

Cover and cook until cheese is starting to melt

Place the melted cheesy bread, cheese side down onto the kale slice

Press sandwich and flip

Cook for an additional 2-3 minutes

Remove from pan

Carefully open up sandwich and drizzle with balsamic glaze

Serve and enjoy!

Balsamic Glaze

1/2 cup of balsamic vinegar

1-2 tbls Brown sugar

Directions

Whisk balsamic and sugar in a small sauce pan

Bring to a boil over medium heat

Reduce heat to low and cook stirring often for 10-12 minutes until thickened
