Ingredients:
1 large eggplant
Follow Your Heart Provolone slices
Mini Chery Tomatoes
Pizza Marinara sauce of choice
Salt and pepper
Parsley or basil
Balsamic Glaze, store bought or recipe below
Directions:
Preheat oven to 425
Slice your eggplant and place into colander
Sprinkle generously with salt
Let sit for about an hour
Rinse to remove the salt, pat dry
Place onto baking sheet
Bake in preheated oven for roughly 15-20 minutes
Flipping halfway through
Remove from oven and cool for 5 minutes
Spread each slice generously with sauce
Top with cheese slices
Top with tomatoes
Place back into oven for roughly 5 minutes
Then place under the broiler for 1-2 minutes, carefully watch so cheese doesn’t burn
Remove and drizzle with balsamic glaze
Top with fresh parsley or basil
Balsamic Glaze
1/2 cup of balsamic vinegar
1-2 tbls Brown sugar
Directions
Whisk balsamic and sugar in a small sauce pan
Bring to a boil over medium heat
Reduce heat to low and cook stirring often for 10-12 minutes until thickened
