Perfect replacement for that famous Deli Egg Salad Sandwich. Super tasty and refreshing!
Ingredients:
1 block of extra firm tofu drained
1 block of firm tofu drained
1/2 cup Vegenaise
1/4 cup of yellow mustard
1/3 cup of relish
1 rounded tablespoon nutritional yeast
1 teaspoon of black salt
1/3 cup of finely chopped red onion
1/4 cup of chopped scallions (green and white parts)
Garlic salt, to taste
Lemon pepper, to taste
Black Pepper, to taste
Directions:
Make sure all the moisture is removed from your Tofu
Crumble the tofu blocks into a large bowl Add remaining ingredients and mix well Allow to cool in refrigerator for at least 30 minutes Serve in between hearty bread slices and serve with your favorite condiments. Yup, it's THAT easy
