Mini Pecan Pies


What is better than Pecan Pie? Only these Mini Pecan Pie's!! They are the perfect bite of Pecan magic.

Ingredients:

Pillsbury Pie Crusts

1 cup brown sugar

2 Follow Your Heart Vegan Eggs

1 rounded cup of chopped pecans

1 tbl of almond milk

¼ cup white sugar

½ cup butter, melted

2 tbls of flour

Dash of vanilla or almond extract

Mini Muffin Pan

Directions:

Preheat oven to 375

Cut our circles in your crust to the size of your mini muffin pan

Press each one into pan

In a medium bowl whisk your Vegan eggs according to directions

Stir in your butter

Once mixed in stir in your sugars and flour

Mix well

Add in your milk, extract and nuts

Mix well

Spoon in a generous amount into your mini muffin pans

Bake in pre heated oven for roughly 20 minutes

Remove and repeat with remaining pie ingredients

Serve and Enjoy!
