No fish were harmed in the making of this beautiful and tasty dish! The Hearts of Palm recreates that flaky filet texture of a fish without the fishiness and using only plant based ingredients. Yum!
Ingredients:
1 14.5 oz jar of heart of palm, drained
1-2 lemons, juiced
3 garlic cloves minced or 1 tablespoon of crushed garlic
1/2 cup of earth balance butter
1 teaspoon of dried parsley
Dash of Salt and Pepper
Directions:
Preheat oven to 375
Place each heart of palm onto a cutting board
Using a flat metal spatula carefully press down to flatten each hearts of palm
(They should look like flat fish fillets)
In a large frying pan melt 1-2 tablespoons of butter over medium high heat
Once melted and hot, carefully add in your flattened hearts of pam
Cook for 3-5 minutes until golden brown
(Try to keep them intact)
Flip and cook for an additional 3-5 minutes
Grease a baking dish
Place each heart of palm into dish
Sprinkle with ½ teaspoon parsley
Using same frying pan melt remaining butter
Add in your garlic and cook for 2 minutes
Add in your lemon juice, remaining parsley and salt and pepper
Spoon a little of sauce onto each hearts of palm, reserve the rest of sauce for serving
Place baking dish into preheated oven for 25-20 minutes until bubbly
Remove from oven
Plate and serve with additional butter sauce
