Back to school time has never been tastier. This simple but tasty dish is the perfect comfort food for these hectic back to school days!
Ingredients:
1 lb of elbow macaroni
1 roll of Lightlife Ground meat
½ onion, diced
2 cups of Follow Your Heart Cheddar Shreds
1 14.5 can of diced tomatoes
2-3 cups plant based milk ( I used almond)
1.5 cups of water
2 beefless cubes/seasoning
1 tbl Dried Italian seasoning
1 tsp Garlic salt
½-1 cup ketchup
1 tbl butter
Parsley for garnish
Oil for frying
Directions:
In a large frying pan add oil and heat over medium high
Add in your onions and cook until translucent
Add in your light life ground meat
Cook for 10 minutes, using a spatula to crumble while cooking
(You may need to add more oil to keep from sticking)
Season with Italian seasoning
Remove when browned and crumbled
In same pan add your butter, scraping bottom to remove residue
When melted, add in your milk, water and beefless cubes
Stir to melt beefless cubes
When brought to a boil add in your canned tomatoes and noodles
Cook until tender (you may need to add in more milke or water if it drys up too fast)
(Keep in mind you will not be draining the water)
Once tender add in your beef, mix well
Add in your cheese and mix well
Stir in your ketchup, starting with 1.2 cup and mix well
Add more if desired
Season with salt and pepper
Serve and enjoy
