This burger made using corn fritters for the bun will blow your mind!
Ingredients:
Corn Fritter Buns, recipe below
Beyond Meat Beyond Burgers
Follow Your Heart Chipotle Vegenaise
2 avocadoes, mashed
½ cup cherry tomatoes, chopped
Salt and pepper
Lettuce
Directions:
Mix your mashed avocado and chopped tomatoes
Season with salt and pepper
Set aside
Form your beyond meat patties into desired size.
(Have them match the size of your corn fritter bun)
Cook according to directions
Prepare burgers
Spread a generous amount of chipotle vegenaise on one side of two buns
Place one bun down, chipotle side up
Place a piece of lettuce down
Top with your cooked beyond meat burger
Top with your avocado mash
Top with bun, chipotle side down
Repeat
Serve and enjoy!
Corn Fritter Bun Ingredients:
2 cups of cooked Corn
½ small onion, diced
1/2 cup of Just Egg
½ cup of flour, maybe more
1 jalapeno, minced
1 tsp garlic salt
Pinch of pepper
¼ cup of chopped parsley
Oil for frying
Directions:
Combine all ingredients together in a medium mixing bowl (minus the oil)
Mix well
If too wet add in more flour
Heat oil in medium frying pan over medium-high heat
Form patties into roughly ½ thick and the size you want your bun
Place into hot oil and fry on each side for roughly 3 minutes
(Be patient, let it fry for a few minutes before moving it around)
Flip and fry for 3 minutes on the other side until browned and crispy
Remove and place on a paper towel
Repeat adding more oil if necessary
