My favorite dish to order at every Indian restaurant that serves it!
Ingredients:
16oz Organic Chopped Spinach(frozen)
2 potatoes, cubed and cooked
1 15oz can of corn, drained
3 garlic cloves
1 bunch of cilantro
1 tablespoon minced ginger
1/2-1 cup flour
3/4 cup Planko bread crumbs
1/4 cup nutritional yeast
1 teaspoon of cumin, garlic powder, onion powder, curry powder, paprika, hot sauce, pepper
2 teaspoons of salt
Oil for frying
Yogurt Sauce, recipe below
Directions:
Heat spinach according to package
Cool and squeeze from water
Place into a food processor
Add your corn, garlic, and ginger
Blend until mixed together thoroughly and a paste forms
Add in all your spices,m blend
Remove from food processor and place into a large bowl
Mash in your potatoes
Add in flour, start with half*
Add in nutritional yeast and bread crumbs
Heat a little oil in a large frying pan over medium heat
Using hands roll roughly 1/3 cup of mix into a ball
Carefully flatten into a 1/4-1/2 inch patty
Place into hot oil and fry on each side for 2-3 minutes until browned
Drain on paper towel
Serve with Yogurt Sauce
*The amount of flour will vary depending on how much liquid was removed from your spinach. Consistency should be far thicker than pancake mix
Cilantro Yogurt Sauce
Combine the following and marinate in refrigerator for 1 hour before serving
14-16oz of Vegan plain yogurt
1/3 cup Follow Your Heart sour cream
Juice from 1 lemon
Pinch of Garlic and onion powder
Pinch of Garlic salt
1/2-1 bunch finely chopped cilantro
