We CAN have it all!!! Including one of the most favorite dishes at sushi....
Ingredients:
2 cups prepared sushi rice
2 tbl rice vinegar
Just a spoonful of sugarrrrrrrrrr
2-3 tbl soy sauce
1/4 cup FYH vegenaise
1-2 tbl of sriracha
Oil for frying ( sesame or vegetable)
Plastic wrap
Micro Greens for garnish
Directions:
Mix your cooked rice with vinegar, sugar, and soy sauce
Allow to cool
Mix your vegenaise and sriracha, make it as spicy as you like
Chop your tu-no tartare into tiny pieces
Mix with your spicy vegenaise place in fridge until ready to use
Using cooled rice and wet hands grab your rice and place into center of large piece of plastic wrap
Form into a long log
Pack it really tightly
Doing your best try to square off the log
Place in freezer for 5 minutes
Heat a little oil in a frying pan
Carefully remove rice from the plastic wrap
Using a wet knife slice into roughly 1/2-1 inch squares
Place squares into hot oiled pan
Carefully fry on each side for roughly 2 minutes, using a spatula to flip
Remove and repeat with remaining rice cakes
Top each crispy rice cake with a spoonful of spicy tu-no
Top with micro greens
Serve and enjoy!
