Fried Mushroom Tacos


One of the new favorite things I have made. Such a perfect blend of flavors and textures. Try and eat just one taco, I dare you!

Fried Mushroom Ingredients:

Roughly 12oz of oyster mushrooms

1 cup flour

1/2 cup corn starch

1.5 cans of sparkling water

2 teaspoons salt

1 tablespoon soy sauce

1 teaspoon pepper

Oil for frying

Fried Mushrooms Directions:

Wash and dry mushrooms

In a large bowl mix together flour, corn starch, water, soy sauce, salt and pepper

If it's too watery add more flour, too thick add more water

Heat your oil, roughly 3-4 inches deep

Toss your mushrooms into the batter

Fry in small batches 3-5 minutes until golden brown and crispy*

Remove from oil and drain on a paper towel

Repeat with remaining mushrooms

Mushroom sauce ingredients:

3 tablespoons of earth balance butter

3-4 garlic cloves minced

1/2 cup of soy sauce

1 tablespoon of sugar

1 tablespoon of chili garlic sauce

Mushrooms sauce directions:

Melt your butter over medium heat

Add in your garlic, sauté for 5 minutes

Add in remaining ingredients and bring to a boil

Lower heat and simmer for 5 minutes

Toss with crispy mushrooms

Slaw ingredients:

2-3 tablespoons of FYH vegenaise

1 tablespoon of white wine vinegar

Dash of red wine winger

1-2 teaspoons of sugar

Salt and pepper

1 bag of broccoli slaw

Slaw Directions:

Whisk together first 5 ingredients

Toss with broccoli slaw

Prepare tacos:

In a flour tortilla add your mushrooms

Top with slaw

Serve and Enjoy!!
