Who doesn't love Latkes? Try these delectable ones using yams instead of russet potatoes!
Ingredients:
2 large yams, peeled and shredded
1/4 teaspoon of baking powder
1/2 onion diced
1 prepared Follow Your Heart Egg
1/2 cup garbanzo bean flour
1/4 teaspoon of onion powder, garlic salt and pepper
Oil for frying
FYH Sour Cream for serving
Directions:
In a large bowl add all ingredients, except oil and sour cream
Mix well
Heat a good amount of oil in a large frying pan
(roughly 1/4 inch deep)
Heat over medium-high heat
Form mix into 2-3 inch patties
Carefully place into hot oil
Fry on each side for 3-4 minutes until golden brown
Add more oil if needed
Remove from oil and place onto paper towel to drain
Serve with Sour Cream
