Tres Leches Cake


The infamous Tres Leches Cake, also known as a spongy, buttery cake soaked in 3 different types of milk!

Wet Ingredients:

2 ener g eggs, prepared

2/3 cup water

1 cup sugar

5 tbl of melted earth balance margarine, cooled

1.5 tbl vanilla

Pinch of Salt

Dry Ingredients:

1 3/4 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

Other Ingredients:

Cinnamon

(Whipped Cream of choice, or homemade)

Milks (info and recipe below)

Directions:

Preheat oven to 350

Sift together your dry ingredients in 1 bowl

Whisk your wet ingredients together in another bowl

Slowly stir your wet ingredients into your dry ingredients

Pour into a greased round pan

Bake for 30-35 minutes until toothpick comes out clear

Remove from oven and let cool

After cooled for 10 minutes carefully remove from pan

Allow to cool while you prepare your milks (recipe below)

Cut cake in half horizontally

Place bottom back into pan

Pour 1/2 warm milk mixture over cake

Press down into cake with flat spatula

Place top of cake on bottom half

Using a toothpick poke several holes

Pour remaining warm milk mixture over entire cake

Pressing down with spatula

Cover and refrigerate overnight

Top with whipped cream and sprinkle with cinnamon

MILKS

Milk 1:

1/4 cup soy milk or Almond milk

Milk 2:

1 can coconut milk

1/2 cup sugar

Boil summer for 20 minutes

Milk 3:

1 cup of cashew milk

1 tbl of earth balance margarine

Boil and simmer to reduce, roughly 20 minutes

Directions:

Once milks have been reduced combine all together

While warm follow pour directions above
