These will disappear before your very eyes. Perfect to bring to your next Holiday, they will be a HIT!
Ingredients:
3 yams peels and cubed
6-8 tablespoons of earth balance butter
Rounded 1/3 cup brown sugar, more if you like it really sweet Dash of cinnamon
1/4 cup of almond milk
1 Pepperidge Farm Puff Pastry sheet, thawed
2 tablespoons of flour
1 bag of Dandies mini marshmallow
Directions:
Boil your yams in water until soft to touch with a fork
Turn off heat
Drain and add return to pan
Mash yams with butter, brown sugar (cinnamon), milk and flour
Preheat oven to 400
Spray a mini muffin pan with vegetable oil
When pastry sheet is thawed Roll out to form a large rectangle
Cut into 1-2 inch squares
Place the pastry squares into mini muffin pans
Spoon a small amount of yam mix into pastry shells
Bake in preheated oven for 5-8 minutes
Remove and top with a few marshmallows
Return to oven and bake for an addition 8-10 minutes until golden brown.*
*There might be extra yam mix, feel free to use the other pastry sheet to make more. They will go fast!
