Now Ms. Vegan mixes Mexican and American in this easy and tasty hamburger quesadilla made in a waffle maker! Such a yummy way to enjoy your classic Cheeseburger!
Ingredients:
1 package of Beyond Meat Crumbles
Salt and Pepper
Burrito sized tortillas (Sized to your waffle maker)
1 package of FYH Cheddar shreds
2 tomatoes, diced
1 red onion, diced
2 tablespoons or more of Earth Balance butter, softened
Ketchup
Directions:
Heat your crumbles according to package
Season with salt and pepper, set aside
Heat your waffle maker
Butter 1 side of 2 tortillas
Place 1 tortilla, butter side down on waffle maker
Drizzle with a good amount of ketchup
Top with beef crumbles, tomatoes, onions cheddar and more ketchup
Place 2nd tortilla on top, butter side up
Close your waffle maker and cook until golden and crispy
(I have a stove top waffle maker and therefore have to flip halfway during cooking)
Remove from waffle maker and let sit 3-5 minutes before serving
Repeat with remaining ingredients
Serve with extra ketchup, YUM!
