A very APPETIZING appetizer!
Ingredients:
24oz Whole Mushrooms
1/2 onion, chopped finely
1 tablespoons of nutritional yeast
1 tablespoons olive oil
6oz of Soy Chorizo
1/2 cup of Daiya mozzarella shreds
1/4 cup Ms Vegan Parmesan(below) or Follow Your Heart Grated Parmesan
Directions:
Remove stems from mushrooms
Chop the stems up finely
In a small sauce pan sauté your onion and stems in olive oil over medium high heat
Cook for 5 minutes
Stir in your Soy Chorizo
Cook for 2-3 minutes
Turn off heat
Let cool for 10 minutes
Preheat oven to 400
Stir in your cheeses into the mix
Mix well
Stuff each mushroom shell with soy chorizo mix
Place onto a greased foil lined cookie sheet
Bake for 20 minutes

In a food processor blend together:
1 cup of cashews
1/3-1/4 cup of nutrional yeast
1 teaspoon of garlic salt
