Sopes are one of my favorite traditional Mexican dishes. Such a fun and tasty bite sized treat, packed with flavor!
Ingredients:
2 cups of masa
1.5 cups of warm water
1 teaspoon of salt
1 bag of Beyond Meat Fiesty beefless crumbles
Taco seasoning
Vegetarian refied beans
FYH Sour Cream
Ms Vegan Pico De Gallo
Oil for frying
Directions:
Prepare your masa dough
Mix together the first 3 ingredients
Add more water if too dry
Form into 2 inch balls
Flatten out into sopes, little bowl/plates
Heat your oil in a large frying pan, roughly ½ inch thick
Place sope’s into hot oil and fry on each side for 2-3 minutes
Remove from oil and drain on paper towel
Cook your crumbles according to directions
Season with taco seasoning Heat your beans and spread on sope’s
Top with seasoned beef crumbles
Top with a spoonful of sour cream followed by pico del gallo
Ms Vegan Pico:
3 tomatoes, diced
1/2 red onion diced
1/4-1/2 cup cilantro, as much as you like
1 lemon, juiced
Garlic Salt
Pepper
Directions:
Mix together all ingredients
Let marinate for 15 minutes
Add more salt or lemon if needed for your taste
