There's nothing better than a good old Potato Salad. With a hint of dijon and vinegar this salad will blow you away.
Ingredients:
5 Large Red Potatoes
1/2 red onion, chopped
1/2 bunch parsley, roughly chopped
2 tablespoons Garlic Vegenaise*
1/4 cup FYH Vegenaise
2-3 tablespoons white wine vinegar
2 rounded tablespoons Whole Grain Dijon mustard
2-3 teaspoons sugar
Salt and pepper
*If you don’t have Garlic Vegenaise, use an additional 2 tablespoons vegenaise with 1 garlic clove minced
Directions:
Wash and cube your potatoes
In a large pot with water, bring to a boil and cook until tender
Remove from heat and drain
Place into a large mixing bowl
In a medium bowl combine the last 6 ingredients
Mix well
(Do a taste test, add in more of sugar, salt, vegenaise or vinegar if needed)
Toss with your warm potatoes
Add in your onion and parsley
Mix well every 5 minutes while it cools to room temperature
Place in refrigerator for at least an hour before serving
