Ingredients:
10oz frozen chopped spinach, thawed and drained
4oz of chopped green chiles
½-1 cup chopped cherry tomatoes
1 cup Daiya Mozzarella Shreds
1 cup Daiya Cheddar Shreds
8oz of Follow Your Heart Cream Cheese
½ cup FYH Parmesan or Ms Vegan Parmesan, recipe below
1 tablespoon of cumin
1 tablespoon of chili powder
1 tsp of paprika
1 tsp of cayenne
1 tsp salt
1 cup of salsa
Directions:
Preheat oven to 400
Combine all ingredients in a bowl
Mix well
Pour into small/medium casserole dish
Cover
Bake in preheated oven for 45 minutes
Remove cover and stir halfway through, leaving cover off
Remove and let sit 5-10 minutes before serving
Serve with chips of choice
Ms Vegan Parmesan
In a food processor blend together:
1 cup of cashews
1/3-1/4 cup of nutrional yeast
1 teaspoon of garlic salt
