One of my new favorite quick and easy Mexican dishes! Can also be served in a tortilla!
Ingredients:
Slow Cooked Carnitas, recipe below
1 cup of cooked corn
2 zucchini's chopped
½ onion chopped
Rice
FYH Sour Cream
Directions:
Preheat oven to broil
In a medium pan add a little oil and heat over medium high heat
Sauté your onion and zucchini
Cook for roughly 3-5 minutes
Remove and place onto cookie sheet
Place under the broiler for 15 minutes
Stirring every 5 minutes
Cook longer if needed
(You want it to brown)
Using the same frying pan add a little more oil
Heat over medium high
Place in desired amount of carnitas and heat for a few minutes
Prepare your bowls
Rice, carnitas, corn and zucchini mix, drop of sour cream
Serve and enjoy!
Ingredients:
2 cans of Jackfruit in brine
2 beefless cubes
1 onion, diced
5 garlic cloves, whole
1 bay leaf
1 tablespoon of cumin
1 tablespoon of chili powder
1 tablespoon of soy sauce
1 cup of Orange Juice
1 teaspoon of tajin, salt and pepper
Directions:
Place all the ingredients into a large crock pot
Mix well
Cook for 6 hours
Half way through using two forks shred the jackfruit
Mix into the juices
After 6 hours remove from heat
