Reuben Sandwich


Sometimes a warm, simple hearty sandwich can make all the worlds troubles disappear. This sandwich is THAT sandwich! The Vegan take on the famous deli sandwich.

Ingredients:

1 package of Tofurky Peppered Turkey Deli Slices

1 package of Tofurky Hickory Turkey Deli Slices

1 15oz can of Beets, Just the Juice

1 tablespoon of red wine vinegar

1 teaspoon of salt

Daiya Swiss Cheese Slices

1 jar of sauerkraut, drained

Rye Bread

Russian Dressing, recipe below or FYH Thousand Island

Earth Balance Butter

Directions:

In a container with a lid add the first 5 ingredients

Allow to marinate overnight

Remove slices from juice

Butter 1 side of each of your bread slices

Spread a generous amount of Russian spread on the other sides

Place 1 slice, butter side down in a large frying pan over medium high heat

Top with 1.5 slices of cheese, followed by sauerkraut, several slices of deli meat, more sauerkraut

Top with second slice of bread, butter side up

Press down and fry on each side for 2-3 minutes

Remove from pan and repeat with remaining ingredients

Serve immediately

Russian Dressing:

Whisk together the following ingredients

1 cup of FYH Vegenaise

¼ cup of ketchup

1 tablespoon of chili sauce

2 teaspoons of sugar

1 tablespoon of red wine vinegar

1 tablespoon of beet juice

Marinate for 30 minutes
