Like a brownie, minus the chocolate, with a lot of goodness!
Ingredients:
1 cup earth balance butter, softened
1 cup packed brown sugar
1 cup white sugar
1 rounded cup of apple sauce
1 1/2 cups all-purpose flour
2 heaping teaspoons baking powder
1/2 teaspoon salt
2-3 yams, peeled and finely shredded (Makes roughly 2 cups)
Topping:
1 cup confectioners' sugar
2 tablespoons earth balance, softened
2-3 tablespoons vanilla almond milk
Directions:
Preheat oven to 350
In a medium bowl combine your flour, baking powder and salt
In a large bowl add together your butter, brown sugar, white sugar, apple sauce and vanilla
Cream until smooth
Stir your dry mix into the wet mix, stir until blended
Fold in your shredded yams
Grease a 9x13 baking dish
Evenly pour in your batter to your baking dish
Bake in preheated oven for 30-40 minutes
Brownies will be done when toothpick comes out clean
Remove from oven and prepare your topping
Mix together your sugar, butter and milk
Evenly pour over your warm brownies
(Make sure your brownies are still warm when you add topping)
